Ingredients
  • 8 slices of sourdough bread about 1/2 an inch thick
  • 400 grams shredded or sliced sharp cheddar cheese
  • 400 grams shredded or sliced low-moisture mozzarella cheese
  • 4 tablespoons extra-virgin olive oil
Directions
  1. Preheat skillet over medium heat.
  2. Coat the sourdough bread with extra virgin olive oil.
  3. In a medium to high heat Pan, Grill one side of the bread for about a minute or until lightly brown before adding your cheeses to it.
  4. Flip it over, layer your cheeses about 1/2 inch thick in total and make a sandwich.
  5. Heat each side of the sandwich. Using a spray bottle, generously spray water in the pan to create steam, and cover it. Cook for 2 minutes or until the cheeses are melted.
  6. Repeat with remaining ingredients. Serve hot or straight from the pan.
