One Bite Sushi Poppers

Looking to create an at-home date night but not sure what to serve on the menu? These One Bite Poppers are so easy to whip up as an appetizer in a three-course meal or as a snack as you paint-and-sip at home. —Marie Lynn Whitted

Ingredients
  • 1 cup Rice
  • 1.25 cups Water
  • 1 tablespoon Oil (of your choice)
  • 3 tablespoons Seasoned Rice Vinegar
  • 2 tablespoons Black Sesame Seeds (toasted)
  • Wasabi - for dipping and presentation
  • Fillings of your choice (ex. protein, veggies, shrimp)
Directions
  1. Prepare the rice. Bring water to a boil and add rice and oil. We used Super Lucky Elephant's Thai Hom Mali Jasmine Rice, Nutiva Organic Coconut Oil and a pinch of salt. Cover with a lid, reduce the heat for about 15 minutes or until cooked. Set aside, removed from heat.
  2. Combine the rice, seasoned rice vinegar and sesame seeds in a bowl. To avoid clumping, do not stir, but toss gently.
  3. Use wet fingers to palm a layer of rice. Place in filling of your choice. We used diced cucumbers, smoked salmon and mango to make a variety of poppers. Roll firmly into a ball. Repeat using all ingredients.
  4. Add to plate and top with Wasabi for presentation. Enjoy!
