This roasted corn, tossed with snap peas ,garlic, green onions, and topped with a balsamic vinegar & olive oil with orange zest is a taste of summer in every bite. It's a perfect Florida snack with happy hour or side dish with your fav BBQ. —Tiffany Audia

Ingredients

Ears of fresh corn on the cob

Green onions

1 handful
Snap peas

1 handful
Feta cheese crumbled

1/2 cup
Balsamic vinegar

1/2 cup
Olive oil

1 dash
Salt
-
1 dash
Black pepper

1 dash
Onion powder
-
1
Orange to zest
-

Garlic cloves
Directions

Clean corm and slice off cob.

In medium high heat skillet add corn and roast until a little brown about 5 mins
-
Thinly slice snap peas and 3 green onions ( you dont need the tops of green onions just bottom parts)

Mix balsamic vinegar, olive oil, and orange zest in bowl with a dash of onion powder, dash of salt, and dash of pepper and mix

Add corn to bowl with snap peas and green onions and pour dressing mix over

Mix everything let cool 5 mins.

Add handful of Feta cheese and serve.
