Traditionally hummus is made out of chickpeas, but on the whole 30, chickpeas are a grain and grains are a no-go. So it looks like hummus is out of the picture. However, in steps this whole 30 butternut squash hummus to save the day! Ingredients
  • 2 cups butternut squash (cubed)
  • 2 tablespoons tahini
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1/4 cup olive oil
  • 1 garlic clove (or 1tsp garlic powder)
  • 1 teaspoon salt
Directions
  1. Place a couple inches of water in the bottom of a pot and bring to a boil. Add your squash in a steamer basket and steam for about 15 min, until your squash is fork tender.
  2. Add squash and remaining ingredients into a food processor. Mix until smooth.
  3. Refrigerate for 30 mins and enjoy!
  4. Leftovers will store for up to 5 days in an airtight container in the refrigerator.
