Ingredients
  • 1 1 zucchini, cut into rings, about 0.3 inches (7 mm) thick
  • 2 ripe tomatoes, cut into rings 0.2-0.3 inches (5-7 mm)
  • 3 tablespoons Greek yogurt
  • 1 garlic clove, finely chopped
  • 2 tsp dill, finely chopped + a little more for serving
  • Olive oil for frying
  • Salt and pepper to taste
Directions
  1. Place zucchini in a bowl, sprinkle with salt, stir and drizzle with a little olive oil. Then fry zucchini until tender. You can use a grill pan or bake them in the oven on a parchment-lined baking sheet.
  2. In a small bowl, combine garlic, dill, salt, pepper, and Greek yogurt.
  3. Build sandwiches: zucchini, then a drop of sauce, tomato on top, again a drop of sauce and zucchini. Sprinkle with dill on top. You can prick with a skewer, or eat with a fork, or just with your hands.

This looks delicious! Making it now. Just ran out for the dill but the herb is the pics is not dill. Oregano or thyme maybe?

In the photo chopped dill, as in the recipe, but I think thyme is also be perfect!
