One of my favorite dishes since childhood: fried zucchini with fresh tomato and garlic sauce. —Anna Vorobiova
Ingredients

1 zucchini, cut into rings, about 0.3 inches (7 mm) thick

ripe tomatoes, cut into rings 0.2-0.3 inches (5-7 mm)

3 tablespoons
Greek yogurt

garlic clove, finely chopped

tsp dill, finely chopped + a little more for serving

Olive oil for frying

Salt and pepper to taste
Directions

Place zucchini in a bowl, sprinkle with salt, stir and drizzle with a little olive oil. Then fry zucchini until tender. You can use a grill pan or bake them in the oven on a parchment-lined baking sheet.

In a small bowl, combine garlic, dill, salt, pepper, and Greek yogurt.

Build sandwiches: zucchini, then a drop of sauce, tomato on top, again a drop of sauce and zucchini. Sprinkle with dill on top. You can prick with a skewer, or eat with a fork, or just with your hands.
