Great summer recipe for your breakfast.
My grandma always cooked these fried eggs when I was a child, and I adored them for as long as I can remember.

Ingredients

ripe tomatoes

bell pepper

medium yellow onion

free-range eggs

1 tablespoon
parsley, finely chopped

1 tablespoon
dill, finely chopped

1 sprig
basil

1 tablespoon
olive oil

salt and pepper to taste
Directions

Slice vegetables into rings 1 cm (about 1/2 inch) thick.

Heat olive oil in a large skillet and fry vegetables for 1-2 minutes on both sides. Add some salt.

Crack eggs over the vegetables. Season with salt and pepper, fry until tender over medium heat, uncovered.

Remove from heat, add parsley, dill, and basil and serve immediately.
