Ingredients

Pumpkin

Sweet Potato

Carrots

Celery Stick

Brown Onion

500 milliliters
Hot water

Vegetable Stock Cubes

Bouquet Garni

Bay Leaves
Directions

Slice the "Jamie Oliver" Holy Trinity of brown onion, celery and carrots. Saute until soft

Cut the pumpkin and sweet potato into chunks. If you prefer you can use regular potatoes rather than sweet potato - it's just more carbs.

Add pumpkin and potato to softened onion, carrot & celery

Crumble the two stock cubes into the mix

Pour in 500ml of hot water (or add water until the veggies are covered)

Chuck in the bouquet garni (I just use one from the supermarket, but if you're super keen you can make your own) and bay leaves

Season with salt & pepper as you like

Cook until everything is soft and then blend.

If you're feeling adventurous, you can add some coconut milk and chilli flakes when you serve it.
