Celebrate what Lizzo has declared the new ‘IT Girl’ for the summer with a Sweet Italian Wunderoots™ Carrot Dog served on a Toasted Wheat Bun, topped with a spicy-tangy carrot vinaigrette and fresh arugula salad. Spicy notes pair wonderfully with the subtly sweet dog for a taste unlike any other. Wunderoots™ Sweet Italian Carrot Dogs

1 packet
(4-6) Wheat hot dog buns

1 cup
Arugula

1 cup
Mixed greens
- Spicy Carrot Vinaigrette

1 cup
Rice wine vinegar

1 cup
Bolthouse Farms™ Carrot Ginger Turmeric juice

1 tablespoon
Dijon mustard

White onion, chopped

Garlic cloves, chopped

Shallots, diced

Carrots, diced

Directions

Toast buns. Spread a thin layer of butter on hot dog buns, place on grill pan until golden
brown. Set aside.

Prepare the spicy carrot vinaigrette. Combine olive oil, chopped onions, garlic and shallots to a pan along with diced carrots, add 1 cup of rice wine vinegar and reduce, add
1 cup of Bolthouse Farms™ Carrot Ginger Turmeric juice and reduce again. Let cool, transfer to a blender and blend with Dijon mustard and until pureed. While blending, drizzle in olive oil until emulsified into a vinaigrette. Add salt & pepper to taste.

Assemble & enjoy! Chop up your arugula. Place grilled carrot dogs in toasted buns. Add the mixed greens and top with your Spicy Carrot Vinaigrette.
