Sheet-Pan Blueberry Pancakes

This easy recipe is perfect for busy school mornings where you just do not have the time to create something that needs a lot of attention. Just pop the mix into the oven for twenty minutes and you have breakfast for the entire family. —Jessica Burke

Ingredients
  • 9 tablespoons unsalted butter
  • 2 eggs
  • 2.5 cups milk
  • 2.5 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 bunch vanilla extract
  • 1 cup blueberries
Directions
  1. Preheat the oven to 425 degrees F.
  2. In a large mixing bowl, whisk the eggs, milk, and vanilla together,
  3. To the same bowl, add the flour, baking powder, sugar, salt, and 4 tablespoons of the melted butter. Wisk to combine
  4. Pour the mixture into a greased sheet pan. Arrange blueberries across the pancake batter. Bake until golden brown and cooked through, about 20 minutes.
