An excellent dish to serve with your barbecue. This light, refreshing side dish goes well with any type of meat and will brighten your meal with bright summer colors. —Anna Vorobiova

Ingredients
  • 2 ripe red tomatoes
  • 2 ripe yellow tomatoes
  • 1 yellow onion, divided
  • 2 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 3 tablespoons Cilantro leaves
  • 1 red hot pepper, small (like piri-piri)
  • Salt and whole black pepper

Directions
  1. Cut the tomatoes and most of the onion into very thin rings. Place on a flat plate and sprinkle with freshly ground pepper.
  2. For dressing finely chop cilantro, chili, and remaining onion. Mix with olive oil and soy sauce. Add salt and pour dressing over tomatoes.
