Just when I'd given up all hopes of ever being able to enjoy lychees in North America, the husband managed to save not just the day, but a good 7 years, by scoring a neat haul of the fruit at a local Indian store in Surrey, British Columbia, so I promptly guzzled more than half the spoils and used the remaining to make this sundowner!

Ingredients

1 ounce
gin of any kind (I used Bombay Sapphire, but if you want extra oomph, I recommend Empress Gin)

2-3
ripe lychees, a bit excessively muddled

1/2
a navel orange, juiced

1 tablespoon
simple syrup (add more if you like your drinks on the sweeter side)

1 cup
crushed ice

Sparkling water
Directions

Add all the ingredients to a cocktail shaker (or if you're like me and don't own one yet, a protein shaker bottle works *reaally* well). Strain into an old fashioned glass, add some more crushed ice and top off the glass with sparkling water. Garnish with a lychee, slice of orange, and some mint leaves!
