Baked chicken with artichokes and olives is the easiest dish to put together and is super delicious. Salty olives, fresh tomatoes and thyme create absolutely amazing flavors in this dish. —Madona Giorgadze

chicken thighs, boneless, skinless

1 cup
canned artichokes

1 cup
kalamata or green olives

3
medium size tomatoes, quartered

Sprig
thyme

2 tablespoons
olive oil

salt, pepper, to taste
Directions

Preheat the oven to 450.

Cut the chicken thighs in half. Place all the ingredients in a deep baking dish, season with salt, pepper, drizzle olive oil and mix well.

Place the dish in the oven and bake until the chicken is ready. Takes about 30-40 minutes.
