Author Notes

I unfortunately don't make this often enough that each time I go to make it I am never sure if it's turning out right until it's mixed with spätzle on the plate. —Melissa P

Ingredients
  • 200 grams munster
  • 150 milliliters white wine
Directions
  1. Cut off rind and cut cheese into small pieces. Add to pan and put on 4. Add white wine
  2. Slowly let the cheese melt, stirring occasionally. At first the cheese and wine will not blend together, which is normal. Once this starts to happen, turn heat up to five
  3. Sauce will remain thin, but stir often. Turn up to six while the spätzles are cooking.
  4. When spätzles are done, take off heat and mix together, making sure to cover all the noodles. The sauce should've thickened some but normal to still be liquide-y. Let sit for a minute or two and then serve as it has thickened.
