On cold nights when a warming drink sounds like the ticket, I have enjoyed experimenting with toddies. Here is my latest one using mushroom tea. The earthy mushroom flavors come through brightened by the lemon. —Sagegreen

Ingredients

walnut size of broken chaga and reishi chunks

1.5 cups
water

2 tablespoons
honey, or to taste

2 tablespoons
fresh squeezed lemon juice

2-3 ounces
bourbon, depending on taste

lemon wheels for garnish
Directions

Simmer the broken chunks of chaga and reishi in water just below boiling for 30 minutes.

Strain and pour the tea into 2 cups or heat-resistant glasses.

Stir in half the honey, lemon and bourbon into each cup. Garnish each with a lemon wheel.
