Author Notes

Apple is a classic fall flavor—here we highlight it in a fizzy sipper you can riff on two ways: with or without alcohol. Both versions of the drink feature a spiced apple syrup made with fall spices, lemon, and ginger, along with walnut bitters and soda. To make it a true special-occasion cocktail, serve it over mixologist-worthy round Craft Ice™ from the LG STUDIO InstaView Refrigerator.

To make a non-alcoholic version, use Seedlip Spice 94, which has aromatic notes similar to gin. Traditional gin fizzes use egg white, but in this cocktail we leave it out and rely on soda for the fizz.

What You'll Need
  • For the spiced apple syrup:
  • 1 1/2 cups turbinado or raw sugar
  • 1 1/2 cups apple juice
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 (1-inch) piece of fresh ginger, peeled
  • Zest of 1 lemon
  • For the fizz:
  • 2 ounces gin or Seedlip Spice 94
  • 1/2 ounce spiced apple syrup
  • 1/2 ounce lemon juice
  • 2 dashes walnut bitters
  • 1 ounce club soda
  • Thinly sliced apple or lemon twist (optional, for garnish)
  1. To make the spiced apple syrup: Place all of the syrup ingredients into a medium saucepan and bring to a boil. Reduce the heat and simmer for 10 minutes.
  2. Remove from the heat and allow to cool to room temperature. Strain into jars and refrigerate until ready to use.
  3. To make the fizzes: Fill a cocktail shaker with ice. Add the gin (or Seedlip), spiced apple syrup, lemon juice, and bitters. Shake vigorously. Strain into a chilled rocks glass filled with ice and top with club soda. Garnish with an apple slice or lemon twist.
