Roasted vegetable soup

This recipe is 100% plant based recipe. plant based diet means only ingredients that come from or are plants are eaten. some people might not see the point or understand why one would do this diet but there are lots of benefits to list a few plants give you lots of vitamins and minerals and 500 calories from vegetables will fill you up more then 500 calories of fast food. you can get protean from different plants such as soy, beans , nuts ,chia seeds, tofu ,whole grain bread ,quinoa and many more and they don't make you blood pressure high and they are all cheaper then meat. when I go out to eat with my family my mom always is worried that a place wont have any vegetarian options and I tell her if they don't then they would not be in business for very long because so many people are vegetarian or vegan or follow a plant based diet so when I have my own restaurant I will have lots of vegetarian options. this soup is supper easy to take all i did was pick a bunch of vegetables from around my house cut them up roast them then blended it all up i will definitely be making it again soon. enjoy —Chef Jacob.

Ingredients
  • 2 sweet potatoes
  • 4 tomatoes
  • 1 1/2 butternut squash
  • 3 shallots
  • 1 Spanish onion
  • 1 head of garlic
  • 1 carrot
  • 2 beets
  • 1 apple
Directions
  1. set oven to roast at 350 and line large bakeing sheet with parchment paper cut all vegetables till all the same size then toss in olive oil salt and pepper feel free to add any other spices like time or rosemary
  2. put in oven and let roast till golden brown about 40 to 45 min depending on your oven just keep an eye on them
  3. as you wait for your vegetables its time to make the stock or blending liquid that will help you have a nice constancy and sweet flavor to our soup so take a large stock pot and put on the stove set to a medium heat
  4. cut up apples carrots and beets then add a bit of olive oil to bottom of stock pot and then the fruits and vegetables all of the things in the pot are sweet so we are gonna caramelize them to bring out all of that flavor
  5. after about 10 to 15 min your veggies will be pretty caramelized and you will notice lots of stuff on the bottom of the pot and that's good don't let that burn because it has lots of flavor so add little bit of water just enough to cover the bottom of the pot
  6. keep adding water and letting it reduce until the roasting vegetable's are finished after about 40 min of doing this the water in the bottom of the pot will be dark and thick
  7. once your vegetables are done roasting add to the pot and with a hand blender blend it all up if you do not have a hand blender use a blender or food processor to turn it into the soup season with salt and pepper then enjoy
