Those left over Christmas meal veggies with some extra protein, a twist on bubble and squeak. —Katias_kitchen

  • Cook time 10 minutes
  • Serves 4
Ingredients
  • Parsnip
  • Potato
  • Brussels sprouts
  • Carrots
  • 2 pieces Egg

Directions
  1. Take your left over Christmas lunch vegetables and mash them up using potato masher, make sure they all mix
  2. Crack the eggs into a separate bowl and whisk them so the yolks and whites are mixed
  3. Heat up a teaspoon of butter in a pan on medium low heat. Empty the vegetables into the pan and pour the eggs on top
  4. Give the vegetables and eggs a stir in the pan so the egg coats them evenly and leave to fry on medium heat
  5. After about 5 minutes, give them another stir and leave to fry for further 5 min, so you get some nice browned bits
  6. Ready to enjoy!
