Those left over Christmas meal veggies with some extra protein, a twist on bubble and squeak. —Katias_kitchen
Ingredients

Parsnip

Potato
-
Brussels sprouts

Carrots

2 pieces

Directions

Take your left over Christmas lunch vegetables and mash them up using potato masher, make sure they all mix

Crack the eggs into a separate bowl and whisk them so the yolks and whites are mixed

Heat up a teaspoon of butter in a pan on medium low heat. Empty the vegetables into the pan and pour the eggs on top

Give the vegetables and eggs a stir in the pan so the egg coats them evenly and leave to fry on medium heat

After about 5 minutes, give them another stir and leave to fry for further 5 min, so you get some nice browned bits

Ready to enjoy!
