I am not a big fan of sweet breakfasts. Once in a while? Yes. Daily? No. This is my take on the savory oatmeal bowl. Hot oatmeal topped with an egg (fried or poached) and scallions/chives, with a light drizzle of sesame oil and a generous splash of soy sauce. You can cook the oats per the recipe or use already cooked oatmeal (warmed). Think of this recipe as a blue print to change on whim. Likewise, this can be breakfast, lunch or dinner. —HalfPint

Ingredients

1/2 cup
rolled oats

1 cup
water

1-2 tablespoons
thinly sliced scallions or chives

1-2
egg(s)

soy sauce or Maggi seasoning

toasted sesame oil

Dash
ground black pepper, optional
Directions

Combine oats and water in a microwave-safe bowl. Microwave on High for 2 minutes 30 seconds. If the oats should be done before the eggs are ready, simply set aside until the eggs are done.

While the oats cook, fry or poach your egg.

Top the oatmeal with the cooked egg, scallions or chives, a light drizzle of sesame oil, and a generous splash of soy sauce, to taste. Optional: a light sprinkle of black pepper. Eat immediately, stirring in all the ingredients and Enjoy!
