Chickpeas belong to same category as white beans, somehow peas etc.
Here we'll describe a recipe that is for all seasons:
A)INGREDIENTS
-One bag of dry chickpeas
-Three fresh of blended tomatoes, or tin of tomato juice for cooking
-Three tablespoonful of olive oil
-Some salt and pepper
-A small onion cut to small pieces
-Some basilicus and mint (optional but preferred)
-Half teaspoonful of sugar
-Some drops of balsamico
-Some leaves of laurel cut to tiny pieces
B)PREPARATION
-We blend the tomatoes or put the tin of tomatoes into a casserole of medium size
-We put the bag of chickpeas, after keeping them in a bowl of water for some hours
-We then put the olive oil (as above)
-We cut the onion into small pieces as above
-We add all the other ingredients as above,
We leave the food boil, at medium temperature C till it's well done, and we can see this, by tasting softness of chickpeas every half an hour, etc
The food is ready and is served with some cold beer in summer or Coca Cola in winter.. —Aikaterini Katapodi
