Ingredients
  • 4 servings noodle
  • 1 broccoli
  • .5 red bell pepper
  • 2 carrot
  • .5 pounds green beans
  • 1 clove garlic grated
  • 1 inch ginger grated
  • 1 tablespoon sesame oil
  • 1-2 teaspoons soy sauce
  • .5 teaspoons veggie better than bouillon
  • 3 green onions
  • .25 teaspoons hot chili oil
Directions
  1. Cut veggies into pieces; strips for the bell pepper, coins for the carrots and bite size pieces for the broccoli. Add any other veggies cut as you like. Green onion sliced thin to go on top.
  2. Prepare your pasta as usual in well salted water. Linguine is great as well as angel hair. I also like rice noodles or even yam noodles. Rinse under cold water to stop the cooking. Set aside.
  3. While pasta is cooking; Steam green beans and carrots for 6-7 minutes using a steamer basket (right over the pasta is great) or counter top steamer, broccoli for 3 in the microwave.
  4. In a nice size sauté pan so things can move around or a deep pasta pan so you can toss add the cooled pasta with the sesame oil and soy sauce, garlic and ginger, bouillon and toss while heating through.
  5. Add veggies to the pasta and sauce, toss around, add sesame oil or soy to taste and chili oil if wanted. Add green onions on the top and serve.
  6. This reheats well and is also fantastic cold*. For variations you can add either a 2 tablespoons tahini or 2 tablespoons peanut butter mixed with a touch of warm water to smooth out. If serving cold add some cucumber and bean sprouts!
