CAN Corn Kernels (drained)
Lime (juiced and zested)
Cotija Cheese (crumbled)
Freshly Ground Black Pepper (season to taste)
Kosher Salt (season to taste)
Take the Fullblood Wagyu beef hot dogs out of the freezer, and place them in the refrigerator 24 hours before starting this recipe.
PREPARING THE CORN MIXTURE
Preheat the grill to 500°F (or high).
While the grill is heating up, place the corn kernels, mayonnaise, chili powder, chopped cilantro, lime juice, lime zest, and Cotija cheese in a large bowl. Mix the ingredients together.
Season the corn mixture with kosher salt and freshly ground black pepper.
Refrigerate the corn mixture until ready to use.
PREPARING THE WAGYU BEEF HOT DOGS
