What You'll Need
Ingredients
  • 1 PACKAGE Double 8 Cattle Company Fullblood Wagyu Beef Hot Dogs
  • 8 Hot Dog Buns
  • 2 CAN Corn Kernels (drained)
  • 1/4 cup Mayonnaise
  • 1 tablespoon Chili Powder
  • 1/2 cup Cilantro (chopped)
  • 1 Lime (juiced and zested)
  • 1/2 cup Cotija Cheese (crumbled)
  • Freshly Ground Black Pepper (season to taste)
  • Kosher Salt (season to taste)
Directions
  1. Tools - Large Bowl, Grill, Wooden Spoon, Paper Towels, Tongs Large Platter
  2. FIRST STEP Take the Fullblood Wagyu beef hot dogs out of the freezer, and place them in the refrigerator 24 hours before starting this recipe.
  3. PREPARING THE CORN MIXTURE Preheat the grill to 500°F (or high). While the grill is heating up, place the corn kernels, mayonnaise, chili powder, chopped cilantro, lime juice, lime zest, and Cotija cheese in a large bowl. Mix the ingredients together. Season the corn mixture with kosher salt and freshly ground black pepper. Refrigerate the corn mixture until ready to use.
  4. PREPARING THE WAGYU BEEF HOT DOGS Take the Wagyu beef hot dogs out of the packaging, and pat them dry with a paper towel. Once the grill is at 500°F, place the Wagyu beef hot dogs on the grill. Cook for 4-5 minutes until the hot dogs begin to char. Then, flip them over, and cook for another 4-5 minutes. Once the hot dogs have finished cooking, remove them from the grill, and set them aside.
  5. FINAL STEPS Lay your 8 hot dog buns on a large platter. Place one grilled Wagyu beef hot dog in each bun. Spoon the corn mixture on top of each grilled hot dog. After all of the Mexican street corn Wagyu beef hot dogs have been assembled, serve, and enjoy!
