A perfect, not-to-sweet strawberry frosting that tastes like fresh strawberries. —GML
Ingredients

large egg whites

2 cups
granulated sugar

6 ounces
freeze dried strawberries, crushed to powder

1/8 teaspoon
salt

1 1/2 cups
unsalted butter

2 teaspoons
pure vanilla extract
Directions

Crush in mortar/pestle or blitz strawberries into a fine powder.

Sift through medium-mesh strainer to remove seeds, then set aside.

Separate egg whites and place in double boiler.

Whisk in sugar and continue whisking over a medium high boil until the sugar has fully dissolved and the egg whites no longer feel gritty.

Remove from heat.

Beat on medium-high until stiff peaks stage.

Fold in strawberry powder, vanilla & sprinkle in salt.

If the meringue is still warm, pop it into the fridge to get it to room temperature or cooler. Cut butter into cubes and add one at a time until mixed.
