Strawberry Swiss Meringue Buttercream

A perfect, not-to-sweet strawberry frosting that tastes like fresh strawberries. —GML

What You'll Need
Ingredients
  • 6 large egg whites
  • 2 cups granulated sugar
  • 6 ounces freeze dried strawberries, crushed to powder
  • 1/8 teaspoon salt
  • 1 1/2 cups unsalted butter
  • 2 teaspoons pure vanilla extract
Directions
  1. Crush in mortar/pestle or blitz strawberries into a fine powder.
  2. Sift through medium-mesh strainer to remove seeds, then set aside.
  3. Separate egg whites and place in double boiler.
  4. Whisk in sugar and continue whisking over a medium high boil until the sugar has fully dissolved and the egg whites no longer feel gritty.
  5. Remove from heat.
  6. Beat on medium-high until stiff peaks stage.
  7. Fold in strawberry powder, vanilla & sprinkle in salt.
  8. If the meringue is still warm, pop it into the fridge to get it to room temperature or cooler. Cut butter into cubes and add one at a time until mixed.
