These energy balls are so easy to make and are a yummy, bite-sized snack to keep you going throughout the week!
To make these vegan, substitute maple syrup for the honey. These could also be made with a gluten free puffed rice. —Kendall

Ingredients

1/2 cup
Natural peanut butter

1/4 cup
Honey

1 teaspoon
Vanilla extract

1 cup
Puffed rice cereal

1/4 cup
Ground flax seed

2 tablespoons
Unsweetened shredded coconut

1 teaspoon
Cinnamon
Directions

In a large bowl, combine the puffed rice cereal, ground flax seed, shredded coconut and cinnamon. Set aside.

In a small saucepan over medium-low heat, combine the peanut butter and honey. Heat the mixture, stirring frequently, until smooth and runny. Stir in the vanilla extract until combined.

Pour the peanut butter mixture over the puffed rice mixture and stir to combine. Let the mixture cool slightly, until it can be easily formed into balls (you can refrigerate to speed this up).

Using your hands, roll the mixture into 12 balls (about 2 Tbsp per ball). Store in an airtight container in the fridge.
