Traditional Vietnamese style dish with modern air fryer cooking! —Paul B. Kennedy
Ingredients

2 pieces
wild caught salmon steaks (1 1/2 inches thick). Pin bones removed.

3 tablespoons
sesame oil
-
3 tablespoons
shallots, minced

1/4 cup
sugar
-
1 tablespoon
garlic, minced
-
1 tablespoon
thick soy sauce

2 teaspoons
fish sauce

1/2 tablespoon
black pepper
Directions

Combine all of the marinade ingredients in a shallow bowl until sugar is dissolved.

Set aside half of the marinade and place in a small saucepan to be heated later and used as a sauce.

Place the shallow bowl with the marinating salmon steaks in the refrigerator for 20-30 minutes.

Remove the fish from the shallow bowl and discard THIS portion of the marinade. Place the steaks in the air fryer basket. Set the fryer at 400 degrees for 12 minutes.

Open the basket and turn the salmon over, continuing to cook for an additional 2-3 minutes or until desired doneness.

While the salmon is cooking in the air fryer, over medium-high heat, heat the remaining marinade in the small saucepan. Stirring constantly, bring to a boil. Reduce to simmer and cook until shallots and garlic are tender.

When salmon is done, remove from fryer and spoon liquid only sauce (no shallots or garlic) over fish. Served with steamed rice.
