A traditional Borek is one of our new family favorites for its juicy spinach and cheese filling. This Turkish vegetarian food is most balancing for Vata dosha so ideal for this time of the year as the seasons move and we crave something warm and grounding. Here is how to make it for a tasty lunch. —Amrita Ma Devi
Ingredients

Spinach

Feta cheese

Leek sliced and washed

ghee

puff pastry

1 teaspoon
cumin

2 tablespoons
fresh parsley

2 tablespoons
fresh cilantro

1/2 teaspoon
Nigella seeds

Salt and black pepper
Directions

Set the oven to 170 degree

In a frying pan melt the ghee and fry the leek. Add in the spinach and let it cook down for 8 minutes.

Crumble the feta cheese and add this into the spinach for another 3 minutes.

Drain off the excess liquid from the filling ingredients. Season with salt and black pepper.

Take the puff pastry from the fridge and roll it out onto baking paper on the oven tray.

Add the filling ingredients into the pastry and fold over the edge to close.

Brush the pastry with milk and sprinkle on the nigella seeds.

Cook in the oven for 20 – 30 minutes, or until the pastry, is golden brown.
