Chili Oil Egg on Toast with Yogurt

What You'll Need
  • 2 slices of good bread
  • Icelandic yogurt (I use Siggi's)
  • olive oil
  • 2 eggs
  • chili oil crisp
  • any fresh herbs (I used chives, oregano, and basil)
  • zest from 1 meyer lemon
  • flaky salt
  • fresh ground black pepper
  1. Toast the slices of bread in a toaster or on the stove until they are golden brown.
  2. Spread a medium layer of the yogurt onto the warm, toasted bread.
  3. Heat a small amount of olive oil in a frying pan and place the eggs in once it is thoroughly heated. When the egg whites begin to turn white, drizzle chili oil on the eggs to your liking and cover.
  4. Once the eggs are cooked to your liking, scoop them up and place on the toast.
  5. Top with the herbs, zest, salt and pepper.
  6. Enjoy!
