Test Kitchen Notes

The quintessential kid sandwich gets a veggie glow-up in this recipe, featuring wilted spinach, plenty of gooey cheese, and two slices of pillowy Sara Lee® White Made with Veggies Bread to add a touch more veggie goodness. And if you’re used to prepping your bread with butter, think again—this sammie calls for a slathering of mayo to make the bread extra golden and crispy for a finish that's parent- *and* kid-approved.

What You'll Need
  • 2 slices Sara Lee® White Made with Veggies Bread
  • 1 teaspoon mayonnaise, divided
  • 1 slice havarti cheese
  • Dash garlic powder
  • Dash black pepper
  • 1 tablespoon shredded Parmesan
  • 1/2 cup spinach, loosely packed
  • 1 slice provolone cheese
  1. Heat a non-stick skillet over medium-high heat.
  2. Spread ½ teaspoon mayonnaise on the outside of each slice of bread, then place one slice of bread in the skillet, mayo side down. Assemble the sandwich on the slice of bread that’s in the pan in the following order: Havarti, seasonings, spinach, Parmesan, Provolone, and the other slice of bread (mayo side out).
  3. Once the cheese begins to melt, about 2 to 3 minutes, flip to the other side. Cook on the second side until cheese has completely melted and bread is golden brown, about 2 minutes.
  4. Serve immediately.
