Ingredients
- Vegetables

1 handful
of thinly sliced Carrot. Strips

1 handful
of thinly sliced cucumber. Strips

Coriander leaves.

Mint leaves

Basil leaves

Thinly sliced avocado.

Fresh lime juice for the avocado.
- Assemble

Rice pancakes for spring cakes.

2 tablespoons
Mayonnaise.

1/2 teaspoon
Wasabi.

Dash
of soy sauce.

1 cup
boiled rice noodles.

1/2 cup
Sweet chili sauce for serving.
Directions

Have everything ready before you start.
Boil water in a kettle.

Pure hot water in a dish and carefully submerge the rice cakes for a minute, carful not to fold.
Place it on a plate.

Start assembling, first 5/6 strings of noodles then on top some carrots, cucumber, and some mint leaves. Then the avocado.

Mix together in a bowl the mayonnaise, wasabi and soy sauce.

Spread just a little of this sauce on the avocado and then follow with the basil and coriander leaves.

Wrap the roll, which should take all the length of the rice cake.

Cut in half and serve with sweet chilly sauce.

NOTE.
Smoked eel or prawns, thinly sliced, can be added when assembled.
