This Mai Tai riff swaps out orange liqueur for yellow Chartreuse as a nod to Trader Vic’s french heritage. In addition, absinthe and rhum from the French Antilles join orgeat (almond syrup) for a winterized spin on the tiki classic. This is a great opportunity to use overproof rum—Smith & Cross is a personal favorite that is not too hard to find and is a workhorse on any bar cart. —Weekly Tiki

Overproof Aged Jamaican Rum

1 ounce
Rhum Agricole Blanc (100 proof)

¾ ounces
Fresh Squeezed Lime Juice

½ ounces
Yellow Chartreuse

¾ ounces
Orgeat

3 dashes
Absinthe
Directions

Shake all the ingredients with ice, then strain into a double rocks glass. Fill the glass with pebble ice. Garnish with mint and an orchid. Serve with a straw.
