What You'll Need
Ingredients
  • 9 ounces dairy-free white chocolate chips
  • 9 ounces dairy-free dark chocolate chips
  • 1 bag of large vegan marshmallows
  • plant-based orange food coloring
Directions
  1. First, add a piece of wax or parchment paper to a baking sheet.
  2. Next, add white chocolate chips to a small bowl with 1 teaspoon of coconut oil and melt in the microwave for about 30 seconds, stir, and add back in the microwave 5 seconds at a time until melted and smooth. *don't melt the chocolate chips too long or it'll cook them and your chocolate will be lumpy.
  3. With a spoon, spread the white chocolate into a puddle-like blob. Don’t spread the chocolate too thin or it will break when you peel it off the wax/parchment paper.
  4. Add a large marshmallow to the top of the white chocolate blob.
  5. Add 3 dark chocolate chips as the buttons underneath the marshmallow, not all in a row, because remember this is a melting snowman and we want to give the impression of it being melted.
  6. Place a little bit of melted white chocolate on the back of 2 chocolate chips and place those on the marshmallow as the eyes. You can dot the chocolate chips with melted white chocolate for pupils with a toothpick.
  7. Melt 2-3 tablespoons of white chocolate chips with 1/2 teaspoon of coconut oil and use the melted chocolate and a toothpick to draw stick arms on the white chocolate blob, in different directions if you want to make them look a little like the wicked witch of the west… “I’m melting… melting!” haha
  8. Dot melted dark chocolate on the marshmallow for the mouth.
  9. Melt 2-3 tablespoons white chocolate chips in a bowl with 1-2 drops of orange food coloring, melt with a little bit of coconut oil and use the mixture to make carrot noses on the marshmallows with a toothpick (or fine paintbrush), making the carrot nose thicker at the top.
  10. Repeat as desired until everything is used up or melt more chcoloate and repeat for however many you'd like to make. Allow them to cool to set up. Then gently peel off the wax/parchment paper when ready to enjoy! Store in an airtight container on your counter.
