Ingredients
-
2 cups
dairy-free white chocolate chips (I used Enjoy Life brand)
-
3 tablespoons
vegan butter
-
4 tablespoons
plant milk
-
4 tablespoons
amaretto
-
3 cups
trail mix (without chocolate)
Directions
-
Line an 8x8 baking pan with parchment paper and set aside.
-
In a medium saucepan, melt the white chocolate chips, butter and milk over low heat. Once the chcolate chips have started to melt, whisk continuously until you have a creamy melted chocolate. Add the Amaretto if using and whisk.
-
Add 3 cups of trail mix to a medium-large bowl. Pour the melted white chocolate mixture over top and stir to coat all of the nuts.
-
Press the mixture in the baking pan and spread it out to fill the whole pan evenly. Place in the freezer to set up for about 1 hour. Slice into bars and enjoy! Keep stored covered in the fridge or freezer.
-
NOTE* If your trail mix has chocolate in it, it will likely melt and turn your bars brown when you stir in the melted white chocolate mixture so I suggest taking it out or finding a trail mix without it. These bars would still taste delicious if you do decide to leave it in though 😉
