Ingredients
  • 2 cups dairy-free white chocolate chips (I used Enjoy Life brand)
  • 3 tablespoons vegan butter
  • 4 tablespoons plant milk
  • 4 tablespoons amaretto
  • 3 cups trail mix (without chocolate)
Directions
  1. Line an 8x8 baking pan with parchment paper and set aside.
  2. In a medium saucepan, melt the white chocolate chips, butter and milk over low heat. Once the chcolate chips have started to melt, whisk continuously until you have a creamy melted chocolate. Add the Amaretto if using and whisk.
  3. Add 3 cups of trail mix to a medium-large bowl. Pour the melted white chocolate mixture over top and stir to coat all of the nuts.
  4. Press the mixture in the baking pan and spread it out to fill the whole pan evenly. Place in the freezer to set up for about 1 hour. Slice into bars and enjoy! Keep stored covered in the fridge or freezer.
  5. NOTE* If your trail mix has chocolate in it, it will likely melt and turn your bars brown when you stir in the melted white chocolate mixture so I suggest taking it out or finding a trail mix without it. These bars would still taste delicious if you do decide to leave it in though 😉
