Chickpeas being a dry food sold in bags in Super Market can be cooked in many ways and can be eaten any time and season of year.
Here is a rich and delicious recipe as below:
A) INGREDIENTS
-One (small) bag of chickpeas bought from Super Market
-One fresh tomato
-One onion
-Olive oil
-Basilicus, mint or both
-Balsamico in tin from super market
-Oreganon
-Salt
-Some pepper

B)PREPARATION:
-We open the bag of chickpeas and put it into a deep plate with dry soda in water bought directly also from Super Market and leave them from the previous night, to get watered for a few hours, in order to get soft and we can cook and eat easily.
-The following day, we throw out the water from plate and they are already soft enough to be cooked.
-We put them in a deep casserole with up to 5 tablespoon oilive oil and after blending also the tomato in blender we add it to them.
-We let them boil for round half an hour, then we cut the onion into very small pieces and put them into the mix.
-We cut basilicus and/or mint we buy from groceries into tiny pieces, (pinches) and we mix further, letting the food get boiled for up to 10 min. more
-Then we add the balsamico, just very little and oreganon
-We have added of course some salt and pepper from the beginning.
-We let the food get boiled further for five min. on the stove at very low temperature in this last phase.
-The Food is ready to be enjoyed; we can drink white wine for ex. or Coca Cola together.. —Aikaterini Katapodi
