Mimosa Bourbon Cider Shrub

A lazy Sunday afternoon in Maine in the fall calls for a crisp, sparkling, cider-based cocktail while we enjoy the football game. This one I'm calling the Mimosa Bourbon Cider Shrub. If you've never had the cocktail version of a "shrub", you're in for a treat! A shrub is technically a "drinking vinegar". It's basically a syrupy liquid created by mixing vinegar, usually apple cider vinegar, with fruit juices and sugar. Sort of like a vinegar simple syrup. Then that fruit-infused vinegar is added to still or sparkling water - or used as the base for various mixed drinks. I'm using Mimosa jam in this recipe, but you can sub in orange marmalade instead. —Lisa Steele

Ingredients
  • 2 ounces apple cider
  • 2 ounces bourbon
  • 1 tablespoon Mimosa jam or orange marmalade
  • balsamic vinegar
  • ginger beer
Directions
  1. Add the apple cider, bourbon, jam and vinegar to a cocktail shaker or pint Mason jar with ice.
  2. Shake vigorously to mix well, then once it's chilled, then strain into an old fashioned glass with more ice and top off with a splash of ginger beer.
