Ingredients

uncooked brown rice

water

2 tablespoons
avocado oil

eggs

garlic cloves

1 cup
frozen peas and carrots or veggie mix

scallions

2 tablespoons
coconut aminos
Directions

Cook the brown rice however you desire (stove top, pressure cooker, etc.)

Heat a cast iron skillet over medium heat. Add 1 tbsp avocado oil. Add the eggs and cook until they are scrambled. Remove them from the pan and set aside.

Add the other 1 tbsp of avocado oil. Add garlic, frozen peas, and carrots, scallions, and cook for 2-3 minutes. Until everything starts to get soft and the garlic is fragrant.

Add the cooked brown rice and let it cook for a few minutes. Stir and scrap the bottom of the skillet, so nothing sticks.

Add in the egg and coconut aminos. Stir to combine and incorporate the egg and coconut aminos.

Remove from heat. Top with additional scallions and serve.
