Beet Frosting sounds a bit strange, but you will be blown away by the bright berry notes beet powder adds to your cream cheese frosting, not to mention, its irresistible vibrant colour. If it's not already stocked in your pantry, you can easily find it at health food stores. It’s an amazing versatile ingredient that goes great in smoothies, salad dressings, and other baked goods. Earl grey tea gently flavours this moist cake with notes of citrus and vanilla. All you need is a hand or stand mixer to make this dreamy cake a reality. It’s quick and easy enough for a casual afternoon tea, but definitely has the sophistication for a show stopping dessert if you are entertaining.

loose leaf earl grey tea, finely ground

greek yogurt

1 teaspoon
vanilla extract

softened butter

granulated sugar

large eggs, at room temperature
- Beet cream cheese frosting

4 ounces
softened cream cheese

2 tablespoons
softened butter

1 teaspoon
vanilla extract

beet powder

1 1/4 cups
powdered sugar

1/4 teaspoon
salt
Directions
- Preheat the oven to 350F. Grease a 9-inch cake pan. In a medium bowl, mix the flour with baking powder, soda, salt, tea, and poppy seeds. Set aside.
- Mix the yogurt with vanilla.
- In a large bowl, cream the butter with the sugar with a hand mixer (or stand mixer) until light and fluffy, about 3 minutes
- Add in the eggs one at a time and continue to beat. Until pale, light and fluffy.
- Mix in half the flour, then half the greek yogurt. Repeat until all ingredients are just combined.
- Transfer to the cake pan and bake until golden and cooked through, about 30 minutes. Let cool completely.
- Meanwhile make the beet frosting by creaming together the cream cheese and butter. Mix in the vanilla and beet in powdered sugar, beet powder and salt until a smooth frosting forms Spread evenly over cooled cake and serve. decorate with fresh flowers if you desire
