These gluten-free, vegan Maple Tahini Banana Bread Bars have all the flavor of banana bread in bar form, topped with a delicious maple tahini protein frosting. What You'll Need
Ingredients
  • Banana Bread
  • 1 cup plant milk (such as flax, oat, cashew, almond, etc.)
  • 1/2 teaspoon apple cider vinegar
  • 3 cups gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda (omit if there's baking soda in your flour mix)
  • 1 teaspoon cinnamon
  • 3 small ripe bananas
  • 1 teaspoon pure vanilla extract
  • 1/2 cup tahini
  • 1/3 cup unsweetened applesauce (equivalent to 1 applesauce cup)
  • 1/2 cup pure maple syrup
  • Maple Tahini Frosting
  • 1 small ripe banana
  • 2 tablespoons protein powder
  • 1/2 teaspoon cinnamon
  • 2 tablespoons tahini
  • 2 tablespoons maple syrup
  • 1/2 teaspoon lemon juice
Directions
  1. In a glass bowl or measuring cup whisk together the plant milk and apple cider vinegar and let it sit for about 10 minutes to create a vegan buttermilk. In a large bowl, stir together the flour, baking powder, baking soda (if your flour mixture doesn't have it already), and cinnamon. Set aside.350 F.   2. In a medium bowl add the bananas and smash them with a fork. Then add the vanilla and tahini to the smashed bananas and stir to combine.
  3. Next, add the banana mixture, applesauce, maple syrup, and vegan buttermilk mixture to the flour and stir to combine, just until all the flour is incorporated. Don't overmix!
  4. Pour the batter into a parchment-lined 8x8 baking pan and bake for 30-35 minutes, until a toothpick comes out clean and the top is golden. Allow the banana bread to cool completely before frosting.
  5. To make the Maple Tahini Frosting add all of the ingredients to a blender and blend until smooth. Spread the frosting over the COOLED banana bread, slice into squares and enjoy! Store leftover banana bread in an airtight container on your counter for up to 3 days.
