Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Remove the leaves and stem of the cauliflower, keeping the head intact. Carefully slice the cauliflower into 1-inch thick "steaks" from the center of the head.
In a small bowl, whisk together the olive oil, smoked paprika, cumin, coriander, turmeric, garlic powder, red pepper flakes or cayenne pepper (if using), salt, and black pepper to make a seasoning mixture.
Brush both sides of the cauliflower steaks with the seasoning mixture, coating them evenly.
Place the seasoned cauliflower steaks on the prepared baking sheet and bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and lightly browned, flipping the steaks halfway through.
While the cauliflower steaks are baking, prepare the cilantro yogurt sauce by blending the yogurt, cilantro, parsley, garlic, lemon juice, salt, and black pepper.
Serve the cauliflower steaks hot, drizzled with the cilantro yogurt sauce on top or on the side. Enjoy as a flavorful and healthy vegetarian or vegan main dish!
