Ingredients

250 grams
cooked white beans

cherry tomatoes

cucumber

1/2
red onion

lemon
-

avocado

fresh herbs (mint, basil, oregano)

1 teaspoon
cumin

salt and pepper

olive oil (per your taste)
Directions

Cut half a medium sized red onion in thin slices and let it soak in the juice of one lemon while you get the rest of the ingredients ready. That will help soften the onion and take away its strong taste.

In a large bowl mix the cherry tomatoes cut in half, the white beans, the red onion with its lemon juice, the cucumber diced, the herbs, salt and pepper, cumin and olive oil. Toss well.

Add slices of avocado for the taste and the color! Serve immediately with fresh baked bread.
