Simple, flavorful summer squash recipe —Carol P.
Ingredients

4
zucchini and yellow squash (whatever combo you wish), cut into chunks, about 1/2 in. thick

1 tablespoon
olive oil

1 tablespoon
dried oregano and thyme (1/2 tsp each or more oregano than thyme, use your taste preferences)

1/2 teaspoon
garlic powder

1 tablespoon
fresh herbs as desired. Basel and mint work well

1/2 cup
crumbled feta (optional)

salt and pepper to taste
Directions

Preheat over to 400 degrees

Put squash in large bowl and toss with just enough olive oil to coat, add dried oregano and thyme, garlic powder, salt and pepper. Roast approximately 25-30 minutes, until browned.

Remove from oven and let cool slightly.

Toss in fresh herbs and feta. Serve immediately or at room temp
