medium white onion, medium diced

medium green bell pepper, deseeded and medium diced

scotch bonnet pepper, deseeded and chopped (optional)

garlic cloves, minced

1 tablespoon
extra-virgin olive oil

2 sprigs
fresh thyme, de-stemmed

can corned beef

1
medium ripe tomato, chopped

scallions, thinly sliced

1 teaspoon
browning (optional)

Johnny cakes, for serving

Boiled banana, for serving

White rice, for serving
Directions

In a skillet over medium heat, add onion, bell pepper, and scotch bonnet pepper. Sauté for 2 minutes, then add garlic and olive oil. Sauté until fragrant, about 1 to 2 minutes.

Add thyme and corned beef. Turn down heat to medium-low and stir until heated through about 5 minutes.

Add tomato, scallions, and browning. Stir well and cook for another 2 to 3 minutes, or until well combined.

Serve hot with Johnny cakes, boiled banana, or over white rice
