Jamaican Bully Beef, or, boiled beef (a name derived from the French bouilli) is comprised of canned corned beef, bell and scotch bonnet peppers for vegetal crunch and heat, and browning—a caramelized sugar sauce that adds a bit of sweet levity to the deeply savory dish. Jamaican Bully Beef
Ingredients
  • 1 medium white onion, medium diced
  • 1 medium green bell pepper, deseeded and medium diced
  • 1 scotch bonnet pepper, deseeded and chopped (optional)
  • 2 garlic cloves, minced
  • 1 tablespoon extra-virgin olive oil
  • 2 sprigs fresh thyme, de-stemmed
  • 1 can corned beef
  • 1 medium ripe tomato, chopped
  • 2 scallions, thinly sliced
  • 1 teaspoon browning (optional)
  • Johnny cakes, for serving
  • Boiled banana, for serving
  • White rice, for serving
Directions
  1. In a skillet over medium heat, add onion, bell pepper, and scotch bonnet pepper. Sauté for 2 minutes, then add garlic and olive oil. Sauté until fragrant, about 1 to 2 minutes.
  2. Add thyme and corned beef. Turn down heat to medium-low and stir until heated through about 5 minutes.
  3. Add tomato, scallions, and browning. Stir well and cook for another 2 to 3 minutes, or until well combined.
  4. Serve hot with Johnny cakes, boiled banana, or over white rice
