Cherry Vanilla Crisp

Summer is for cherries and ice cream of course! This is a simple (and kinda healthy) sweet treat that will perfectly cap off that dinner you're making for family and friends. You can replace the cherries with any fruit (even frozen fruit if that is all you have at home). Top it with ice cream, frozen yogurt, or Greek yogurt and your guests will be drooling! Plus it's gluten-free so everyone can enjoy! —Laura Davidson

Ingredients
  • 3 cups Pitted and Halved Cherries
  • 1 cup Almond Flour
  • 3/4 cup Rolled Oats
  • 1/2 cup Sliced Almonds
  • 1/4 cup Honey
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 teaspoons Vanilla
  • 2 tablespoons Light or Dark Brown Sugar
  • 1/4 cup Butter Cubed and Cold
Directions
  1. Preheat the oven to 350 degrees. Grease a 9x9 inch non-stick pan or casserole dish.
  2. In a small bowl, mix the rolled oats, almond flour, sliced almonds, honey, cinnamon, vanilla, brown sugar, and salt. Cut in the cold butter cubes to the crumble (I use a pastry cutter, but you can also use your hands). Place the crumble in the freezer while you prep the cherries (about 5 minutes).
  3. Place the pitted and halved cherries at the bottom of the greased dish.
  4. Remove the crumble mix from the freezer and spread it evenly across the cherries.
  5. Bake the crisp for 30 minutes or until the top is golden brown. Let the crisp cool on the counter for 10 minutes.
  6. Serve with ice cream, frozen yogurt, or Greek yogurt. Enjoy!
