Salmon Chowder is a healthy soup that's a whole meal. The salmon potato chowder incorporates wild-caught salmon with potatoes, carrots, celery, herbs, and seasonings for an authentic Northwest meal.

Ingredients

1 pound
salmon filet

2 tablespoons
unsalted butter

yellow onion

1
garlic clove, minced

1
carrot, diced

1
celery rib, diced

2
russet potatoes, peeled and diced

5 cups
seafood stock, chicken stock, or water

1/2 teaspoon
dried thyme

2 tablespoons
chopped dill

2 tablespoons
tomato paste

1/4 cup
chopped parsley

1 tablespoon
capers
-
1/2 cup
sour cream
-
salt and pepper to taste
Directions

Cube salmon, and refrigerate until ready to use.

In a 6-quart pot, melt butter. Add onions; season with salt and pepper. Cook for 5 minutes until onions are softened. Add garlic; stir for 10 seconds. Add carrot, celery, and potatoes.

Cover and allow vegetables to steam for 5 minutes.

Add stock or water, thyme, and dill. Cover and simmer (medium heat) for 10 minutes.

Add salmon and tomato paste. Simmer uncovered for an additional five minutes or until the salmon begins to flake. Turn off the heat.

Stir in parsley and capers. Salt and pepper to taste. Serve hot with a dollop of sour cream.
