Green cabbage and kale with cumin and lime

My favorite way to eat greens. So bright and juicy, with good spice. Adapted from What to Eat for How You Feel by Divya Alter. —ixpalow

What You'll Need
Ingredients
  • 1 tablespoon coconut oil
  • 1/2 teaspoon cumin seeds or kalonji seeds
  • 1 teaspoon grated ginger
  • 1 teaspoon sea salt
  • 4 cups green cabbage, sliced thin
  • 4 cups curly green kale, chopped
  • 1 teaspoon lime juice
Directions
  1. Add the oil to a sauté pan and warm over high heat. Once the oil is melted, add the seeds and cook for 10-20 seconds, until fragrant.
  2. Add the cabbage, salt, grated ginger, and a few tablespoons of water. Reduce to low heat, cover the pan, and cook for 10 minutes, until the cabbage is beginning to soften. Check the pan and add more water if the cabbage is sticking to the pan.
  3. Add the kale. Cook for a few more minutes uncovered, until the kale is soft.
  4. Stir in the lime juice. Serve warm.
