Habichuelas con dulce (sweet cream of beans) is a Dominican dessert made with beans, milk, coconut milk, sweet potatoes, raisins, and spices. The result is a soup-like sweet, creamy dessert that can be made ahead, easily feed a crowd (or party), and served chilled or hot. To some, it may be a strange combination of ingredients, but Dominicans love it.

What You'll Need
Ingredients
  • 1 pound dry red beans
  • 3 pieces cinnamon sticks
  • 1 pound sweet potatoes
  • 2 2/3 cups evaporated milk
  • 13.5 ounces coconut milk
  • 1 cup sugar
  • 1/2 teaspoon nutmeg powder
  • 1 1/2 cups sweetened condensed milk
  • 8 pieces cloves
  • 1/2 cup raisins
  • 1 teaspoon salt
  • 2 teaspoons butter
  • 1 teaspoon vanilla extract
Directions
  1. Place red beans and 1 cinnamon stick in large bowl. Remember to rinse beans first to make sure they are clean. Cover in hot water, about 2 inch above the beans. Leave over night.
  2. Add hot water and boil in large saucepan for 1 hour (make sure beans remained covered in water).
  3. While boiling beans, get 1 pound of sweet potatoes; peel, cube and boil them in salty water. Set aside once they are soft.
  4. Blend beans and water. Pass blended beans through strainer. Strain only one cup at a time. When putting through strainer, it helps to mash through with a spoon, because it will be thick, but you want to make sure you get all the liquid out. Put the liquid back into the saucepan.
  5. Add evaporated milk and coconut milk. Turn heat to medium.
  6. Add sugar, sweetened condensed milk, and spices: nutmeg powder, cloves, and cinnamon sticks. Cook on medium heat for 15 minutes and stir every once in a while.
  7. Add sweet potatoes, raisins, salt, butter, and vanilla extract. Don’t worry, those butter stains will disappear. Cook on low heat for 15 minutes more and don’t forget to stir every now and then.
  8. After the 15 minutes it should have the right consistency.
