This is my all time favorite way to preserve citrus when it is in peak season! Citrus can get expensive in Ohio!
Here are my 5 favorite ways to use it:
1. The brine makes for a great electrolyte drink with honey and bubble water!
2. Chopped up and used in pasta dishes!
3. Folded into a compound butter
4. Chopped up and used in chicken salad!
5. Chopped fine in a salad dressing —Lorenzo Tavani

What You'll Need
Ingredients
  • 10 lemons
  • 10 tablespoons salt
Directions
  1. Quarter lemons and add them to a glass jar.
  2. Cover in salt. Smash to release juice.
  3. Loosely screw on lid to allow air to escape from fermentation!
  4. Shake every other day for a week at room temp then store in the fridge!
