Sandwichitos de Mezcla are a soft party sandwich, not too far off from a pimento cheese sandwich, that you’ll find at almost every gathering in Puerto Rico. A surprising mix of ingredients comes together to create an unexpectedly addictive snack. For a firmer spread that’s easier to handle, you can chill the mezcla in the refrigerator for about an hour before assembling the sandwich. —César Pérez

(12-ounce) can SPAM, cubed

(15-ounce) jar Cheez Whiz

(8-ounce) block of cream cheese at room temperature

(6-ounce) jar roasted red peppers

1 teaspoon
garlic powder

1 teaspoon
onion powder

1/2 teaspoon
black pepper

1 tablespoon
lemon juice

loaf soft white bread
Directions

In a food processor, combine SPAM, Cheez Whiz, cream cheese, roasted red peppers, garlic powder, onion powder, black pepper, and lemon juice. Pulse until the mixture is smooth and well combined.

Trim the crusts from the bread and spread a generous amount of mezcla between two slices. Press down gently to ensure the mezcla spreads to the edges.

Cut each sandwich diagonally into halves or quarters. Arrange on a serving platter.
