Pork sausage (can substitute for any other sausage or duck)

Directions

Preheat your oven to 325°F (163°C).

In a large oven-safe pot or Dutch oven, heat olive oil over medium heat. Brown the pork sausage. Remove excess fat if necessary.

Add chopped onions, garlic, carrots, and celery to the pot. Sauté until the vegetables are softened.

Stir in the diced carrots, drained beans, bay leaves, thyme, rosemary, and chicken or vegetable broth—season with salt and black pepper.

Bring the mixture to a simmer, cover, and transfer to the preheated oven. Allow it to bake for about 2-3 hours, stirring occasionally, until the meats are tender and the flavors meld.

In a small bowl, mix together fresh breadcrumbs, chopped parsley, minced garlic, salt, black pepper, and olive oil. (optional for topping)

Sprinkle the breadcrumb mixture over the cassoulet during the last 30 minutes of cooking. (optional for topping)
