shaved brussels sprouts

- For the vinaigrette

extra virgin olive oil

zest of lemon

3 tablespoons
lemon juice

1 tablespoon
dijon mustard

1 tablespoon
honey

Directions

Trim the ends of the Brussels sprouts and remove any loose outer leaves.

Using a sharp knife or a mandoline slicer, thinly shave the Brussels sprouts and transfer them to a large salad bowl.

In a skillet over medium heat, cook the prosciutto slices until they become crispy. This should take 2-3 minutes per side. Once crispy, let them cool on a paper towel.

In a small bowl, whisk together olive oil, lemon zest, lemon juice, Dijon mustard, minced garlic, salt, and black pepper. Adjust the seasoning to taste.

Pour the lemon vinaigrette over the shaved Brussels sprouts and toss until well coated.
